( TAKO-SU )
octopus / cucamber with vinegar dressing
INGREDIENTS | |
* 1 or 2 octopus legs * 2 cucambers Boiled one is convenient for tako-su. (These are male octopus's legs. You see irregular big suckers on them. The taste is the same with female's) |

dressing ( called awase-zu ) |
* vinegar ( 2 table spoon ) * soy sauce ( 1/2 table spoon ) * sugar ( 1/2 - 1 table spoon ) |
other | * salt ( properly ) * ginger ( if you like ) |
1 | * Cut a cucamber in thin round slices. * Put a touch of salt on them and leave them for 15 mins. * squeeze water from them |

2 | * Cut an octopus leg in thin slices | |
3 | * put vinegar, soy sauce and sugar in a bowl and mix up. | |
4 | * put 1 and 2 and mix with 3 | |
5 | * dish up 4 and put thin sliced ginger if you like | |
