TEBASAKI or deep-fried wing points

Tebasaki (wing point ) is usually broiled with salt.
But in Nagoya, it is fried with special spicy sauce and put sesame and pepper..
Ex-president of Furaibo, chain izakaya or bar, completed this style.

Wing points are fried twice.
First fry them at 80% in 150 oil, then move and fry completely in 180-190.
Fring twice make them more tasty.
Apply sauce (made from soy sauce, garlic and sweet sake or mirin )
Then put salt, pepper and white sesame.
